Baked Eggs with Mushrooms

BREAKFAST FOR DINNER!!  It was always such a treat to have egg sandwiches or pancakes for dinner.  Usually I'd be in charge of making it when my daddy was at the fire station.  It's been a tradition forever in my family.  My gramma [Mema] used to feed my mom & aunt breakfast for dinner while my grampa [Papa] was at the fire station too.  It's always my go-to when I can't think of anything else to make.  

This is a little more complex than an egg sandwich, but not by much!  It looks so fancy, but its sooooo simple!

I added a lot of ingredients to this.  All the spices the original recipe called for were salt & pepper.  Too plain for me!  

Ingredients:
1 Egg
Handfull of Sliced Baby Bella Mushrooms
Olive Oil
Salt
Garlic Powder
Onion Powder
Lemon Pepper
Squirt of Lemon Juice
Fresh Chopped Thyme 
Fresh Chopped Dill
Pepper
Shredded Parmesan Cheese 
Wine [for the chef cuz it was a long day - fuck yeah!]
Ridiculous amount of spices for such a small dish
Make It:
Preheat oven to 400.

In a skillet, sauté the mushrooms in olive oil.  Add salt,  garlic powder, onion powder, and lemon pepper.  Cook the mushrooms down [about 6 minutes or halfway through your glass of wine].  Add a little squirt of lemon juice to deglaze the pan.  Add the chopped dill & thyme  at the last second before transferring the mushrooms to a ramekin.  
Sauté mushrooms with olive oil & shit ton of spices
Spray the ramekin with cooking spray.  Put the cooked mushrooms into an oven safe ramekin [I got a set of 4 at Walmart for cheap].  Crack the egg directly on top of the mushrooms.  Add salt & pepper.  Top with parmesan cheese.  Bake for 10 minutes.  I let mine go a little longer - about 15 - because I hate runny, slimy eggs.  
Add fresh herbs at the last second; transfer to ramekin
Final step - add egg, salt, pepper & cheese
It's so simple & delicious!  I really loved this!  If you want to impress someone with a fancy-schmany meal, MAKE THIS!  Maybe an Easter breakfast?  Ohhh you're welcome! ;]
