Baked Eggs with Mushrooms

BREAKFAST FOR DINNER!!  It was always such a treat to have egg sandwiches or pancakes for dinner.  Usually I'd be in charge of making it when my daddy was at the fire station.  It's been a tradition forever in my family.  My gramma [Mema] used to feed my mom & aunt breakfast for dinner while my grampa [Papa] was at the fire station too.  It's always my go-to when I can't think of anything else to make.  

This is a little more complex than an egg sandwich, but not by much!  It looks so fancy, but its sooooo simple!

I added a lot of ingredients to this.  All the spices the original recipe called for were salt & pepper.  Too plain for me!  

Ingredients:
1 Egg
Handfull of Sliced Baby Bella Mushrooms
Olive Oil
Salt
Garlic Powder
Onion Powder
Lemon Pepper
Squirt of Lemon Juice
Fresh Chopped Thyme 
Fresh Chopped Dill
Pepper
Shredded Parmesan Cheese 
Wine [for the chef cuz it was a long day - fuck yeah!]
Ridiculous amount of spices for such a small dish
Make It:
Preheat oven to 400.

In a skillet, sauté the mushrooms in olive oil.  Add salt,  garlic powder, onion powder, and lemon pepper.  Cook the mushrooms down [about 6 minutes or halfway through your glass of wine].  Add a little squirt of lemon juice to deglaze the pan.  Add the chopped dill & thyme  at the last second before transferring the mushrooms to a ramekin.  
Sauté mushrooms with olive oil & shit ton of spices
Spray the ramekin with cooking spray.  Put the cooked mushrooms into an oven safe ramekin [I got a set of 4 at Walmart for cheap].  Crack the egg directly on top of the mushrooms.  Add salt & pepper.  Top with parmesan cheese.  Bake for 10 minutes.  I let mine go a little longer - about 15 - because I hate runny, slimy eggs.  
Add fresh herbs at the last second; transfer to ramekin
Final step - add egg, salt, pepper & cheese
It's so simple & delicious!  I really loved this!  If you want to impress someone with a fancy-schmany meal, MAKE THIS!  Maybe an Easter breakfast?  Ohhh you're welcome! ;]

Stuffed Peppers

I got my inspiration for my stuffed peppers from this recipe
Ingredients:
1/2 small yellow onion, chopped
1 clove minced garlic
olive oil
1/2 [of a 14 oz] can chicken broth
3/4 cup instant rice
1/2 package ground chicken
dried oregano
ground black pepper
salt
paprika
1/2 [of an 11 oz] can corn
4 bell peppers

Make It:
In a large saucepan, cook onion and garlic in hot oil on medium heat for five minutes, or until onion is tender.  Stir in broth.  Bring to a boil.

While the onions cook, start browning the chicken with olive oil in a separate skillet.  Add salt and pepper for seasoning.

After the broth boils, add rice, oregano, pepper, salt and paprika.  Cover and cook per instructions on rice [I took it off the heat and let it sit for five minutes].  After rice is finished, add corn and cooked chicken.

Preheat oven to 400.  Slice tops from peppers and remove seeds.  Fill with rice mixture. Replace tops.  Bake, covered 30 minutes or until crisp-tender...whatever the fuck that means.  I suggest putting a little liquid in the bottom of the pan you bake them in.  I cooked my peppers for about 45 minutes and they still crunched like they were raw.  
The original recipe didn't call for meat, but I really wanted to add some in.  You could totally use beef, pork or turkey too!
It's REALLY hard cooking for only one person haha.  I thought I had calculated this out to 1/4 of the original recipe [calls for 8 - 1/4 would be 2!  Right?], but clearly, math is not my strong suit.  I made the rice filling the night before I actually made the peppers, and I realized there was way too much filling for just two peppers.  I got to be a nice daughter and invited my parents over for dinner!

These aren't too good as leftovers.  I ate the remaining yellow one today for lunch and the pepper was really mushy.  The filling was still good though! :]

I never follow the recipes 100%.  I know what I like in a dish, so usually I'll put my own spin on things.    That's what I'll be doing here, twisting up recipes I find on Pinterest.  I'm not claiming to make all these recipes up on my own, although some will be mine.  I'll always post the link to the pin where I found the recipe and probably the picture from the pin, because, lets face it, I'd rather EAT the food than stand there and take a decent well lit professional looking picture of it!
